Roasting & Grilling ~ Week 5, Basics Series (3/26/19)


Roasting a perfect chicken or vegetable is an art. In our Roasting & Grilling class we will explore how to use dry heat to cook meats and vegetables to perfection. Learn how to use an oven and a charcoal grill to properly and deliciously brown and caramelize dishes with confidence. We will give you all of the tips and tricks so that you will be able to cook moist, tender and beautifully roasted foods with confidence.

Product Description

$800 for 8-week course ($140 when purchasing individual classes),
6-9pm for 8 consecutive Tuesdays, 12 people max. Includes a set of recipes, SCS logo apron and dinner.

Cancellations made less than 10 days from the scheduled class will not be refunded. Payments for classes cancelled 10 days or more before the scheduled class may be applied to a future class or may be refunded.
*If a class does not reach minimum numbers or for some unforeseen reason must be cancelled, you will notified and receive a full refund or you may select a future class to attend.*

Whether a novice in the kitchen or an accomplished home cook, this series will provide an in-depth look at the basic and fundamental methods and techniques necessary to be confident and excel in the kitchen. From knife skills and mis en place, to roasting and braising, blanching and sauté, soups and stocks, pastas and doughs, sauces and more. Using farm-fresh ingredients from Chef Malcolm’s own farm, Stone Tree Farm, paired with ingredients from the finest local purveyors, you’ll learn the skills and techniques in this hands-on series to cook with confidence.
When we are finished cooking, we’ll sit down together to enjoy the meal we’ve just prepared. You will also leave the school with a set of the recipes so you may recreate your experience at home with family and friends.
