French Cooking, Session 6: Provence and Languedoc-Roussillon ~ Chef Malcolm Jessop

Join us for a culinary Tour de France as we explore the regional cuisine that has evolved around the ingredients and seasons of the country's diverse terroir. From the Brittany coast to the foothills of the Alps, and the pleasures of Alsace to the Mediterranean, we will seek out time honored, home cooked classic dishes.
Session 6. Provence and Languedoc-Roussillon
In the south of France, bordering the Mediterranean Sea lies the famous region known as Provence. The fertile Rhone and Durance valleys produce arguably the best fresh food in all of the country, and are commonly referred to as the garden of France. The food in this region is unlike other typical French fare, and is reminiscent of Spanish and Greek cuisine.
*Guests can purchases “French Cooking” classes individually – not required to sign up for all six.

All general cooking class sales are final and non-refundable 10 days before the scheduled class for purchases of 4 people or less, and 30 days before the day of the class for purchases of 5 or more guests. If you are within the above stated windows of time, reservations cannot be canceled or rescheduled. We recommend travel insurance as we cannot make refunds for cancellations due to medical, family or business emergencies or other unexpected events. You can always transfer your reservation to another person.
Payments for classes cancelled more than 10 days (4 or less people) and 30 days (5 or more people) before the scheduled class may be applied to a future class or may be refunded.
*If a particular class does not reach minimum numbers or for some unforeseen reason must be cancelled, you will receive a full refund or you may select a future class to attend.*
About Chef Malcolm Jessop
Malcolm Jessop comes to the Silverado Cooking School with over 30 years of experience in fine dining restaurants and hotels. A graduate of Westminster Culinary School, he completed a 4-year apprenticeship at London’s Grosvenor House. It was in his two-year stay in France that he truly learned to appreciate cooking with the freshest seasonal ingredients from local farmers markets. He has moved here from Chicago with experience in food development, teaching cooking, and catering private events. He is a wonderful addition to the Silverado Cooking School.
Indulge your recipe book and your taste buds with Silverado Cooking School’s hands-on cooking classes in Napa. In our state-of-the-art kitchen, students will use some of the finest equipment available along with fresh, seasonal ingredients from our own farm to prepare delicious meals.
During our Napa cooking classes, you do the cooking under the guidance of a professionally trained chef. After a brief introduction, you will be given various seasonal recipes to prepare. As the dishes are completed everyone will come together to enjoy the meal that they have just prepared.
All classes are hands-on unless otherwise noted and geared towards adults and teens 16+ (with parent consent unless accompanied by an adult). Occasionally, we offer demonstration classes, which are a great way to learn new techniques and observe how to properly prepare regional cuisine.
