CHEF MALCOLM’S FARM IN NAPA VALLEY
Chef Malcolm owns and operates Stone Tree Farm, a gorgeous two-acre farm located in sunny Napa Valley Wine Country. It is here that he farms the organically grown produce that is delivered fresh into the Silverado Cooking School kitchen daily. Working on the farm grants Malcolm ultimate control over what is grown on the farm, and he creates original and interesting menus based on the produce that is at the peak of season.
This Napa Valley farm features 37 different types of fruit trees, 5 varieties of berries, and 15 large raised garden beds, as well as 3 large planting areas for long duration crops where vegetables are grown. Almost all of this Napa farm’s produce is started from seed in the Stone Tree Farm greenhouse. Non-GMO heirloom seeds are sourced from local seed banks, ensuring that the farm produces some of the most diverse and delicious varieties of vegetables in the Bay area. On top of that, everything is organically grown, meaning students never cook or eat any produce that has been sprayed with pesticides.
