Winter Dinner from the Swiss Alps ~ Chef Malcolm Jessop (1/31/18)

$140.00

Switzerland has always been a Mecca for chefs wanting to learn from some of the finest culinary schools in the world. The country now has 118 Michelin starred restaurants, but it is the traditional country fare that we will explore in this class. This is dairy country and that means cheese, lots of cheese. In fact, there are over 450 cheeses, the vast majority being cows milk.
The cuisine has been influenced by France, Italy, Germany, and Austria, so it really has benefited from the best of many worlds.

The recipes may include..
Caramelized onion tart with Gruyere and winter greens
Malakoff (Swiss fondue fritters)
Tartiflette (potatoes with smoked bacon and Reblochon)
Schnitzel with apple and watercress salad
Rosti potatoes
Rippli (smoked pork loin and ribs with root vegetables)
Swiss chocolate Kirsch torte.

Bring an appetite and cozy up in the Silverado Cooking School chalet!
